Veggies & Beef with Goat Cheese
My favorite kind of cheese right now is goat cheese. It's lower in calories than Cheddar, and it just tastes amazing, so I went ahead and threw this recipe together. iI's good, t's healthy and the best part about it--it's easy!

First, head to the store for these ingredients: 1 zucchini (sliced, then cut in half),1 bag fresh spinach, 2 cloves garlic (minced), 1 red pepper, 1 bell pepper, 1 onion, 2 Tbs olive oil, 1 lb. ground beef (lean)-- or you could use turkey meet if you are trying to cut the calories, Goat cheese (about 3 TBS)-- or Feta if you're really trying to cut the calories, but goat cheese is delightful!, 1 tsp red pepper flakes, 2 Tbs Italian seasoning, salt & pepper to taste.
I mentioned above that if you're trying to cut the calories, then you could replace two of those ingredients with lower calorie options: the ground beef & goat cheese. An alternative to the ground beef is ground turkey, and you could replace the Goat Cheese with Feta. There is not a significant amount of cheese in the dish, so it really isn't going to make a huge difference--plus, the goat cheese adds SO much flavor to the dish!
Here is how you prepare the delicious meal:
I always like to prepare my ingredients the way they will be added in. First, wash & cut up all of your vegetables, and mince your garlic.
Take out your larger kitchen pan, turn the burner on medium heat and add the olive oil. Once heated, add the garlic and onion to the pan. You'll cook them for about 5 minutes, or until the onions are almost transparent.
Next, you'll go ahead and add your red and bell peppers. Keep stirring these in for another minute or so.
Now you'll increase your heat to medium-high, then your ground beef--the lower the fat, the better. Here is the tricky part: be watching because when it is 50% cooked, you'll add your zucchini, and when it's 75% cooked, you'll throw in your spinach leaves. It's very important that you try to stick with these percentages or you might end up with soggy veggies.
After you add everything, you'll drain the fat. You can just use the pan lid to drain (you don't need to strain) since it's low fat meat.
The last thing you're going to do is reduce the head to medium-low and add Italian seasoning, the salt & pepper, then stir a bit before adding your dollops of goat cheese. As soon as the goat cheese starts melting, you're ready to serve!
